A go-to for busy days when you want something that feels grounding, vibrant, and satisfying.
Ingredients:

½ cup roasted sweet potato cubes
1 cup steamed or sautéed greens (spinach, kale, or chard)
¼ cup sauerkraut or pickled red cabbage
A handful of chickpeas (roasted or plain)
Optional: a soft-boiled egg or a spoonful of hummus
Olive oil, lemon juice, sea salt, and cracked pepper to finish
Instructions:
Start with a warm base of quinoa or rice.
Layer on your greens, roasted sweet potato, chickpeas, and avocado.
Add brightness with the sauerkraut or cabbage.
Top with your optional egg or hummus.
Drizzle with olive oil, a squeeze of lemon, and a sprinkle of sea salt and pepper.
